1 (1-inch) piece fresh ginger
1 clove garlic
2 tbsp white miso paste
1 tbsp maple syrup or honey
2 tsp toasted sesame oil
¼ plus ⅛ tsp kosher salt, divided
Pinch of fresh ground black pepper
2 (6-ounce) salmon filets

Instructions
Peel and finely grate the ginger and garlic.
In a bowl, combine ginger, garlic, miso paste, syrup/honey, sesame oil, salt, and pepper. Whisk to make the marinade.
Add salmon fillets, skin-side up, and marinate in the refrigerator for 1 hour.
Remove from fridge and let come to room temperature.
