Slow Cooker Chicken Curry

This flavorful chicken curry is rich, creamy, and full of warming spices. Marinate the chicken in yogurt, garlic, ginger, and a bold spice mix, then let your slow cooker do the rest. Simmered with tomatoes and coconut milk, it’s an easy, hands-off dinner that tastes like you spent hours in the kitchen.
Ingredients

1 (2-inch) piece fresh ginger, peeled and grated

1 tbsp garam masala

2 tsp ground cumin

2 tsp ground coriander

2 tsp paprika

1 tsp turmeric

½ tsp cayenne pepper

1½ cups plain yogurt

5 boneless, skinless chicken thighs, cut into 1-inch cubes

1 large onion, finely chopped

2 garlic cloves, minced
-
2 (14.5 oz) cans diced tomatoes

1 can full-fat coconut milk

1 tsp fine grain salt
Instructions

In a large bowl, combine spices, onion, garlic, ginger, and yogurt.

Add chicken and toss to coat.

Cover and refrigerate for at least 2 hours to marinate.

Add mixture to the slow cooker with diced tomatoes and coconut milk.

Cook using the STEW preset.

Once finished, select KEEP WARM mode to serve. Enjoy.
