Slow Cooker Chicken Curry

This flavorful chicken curry is rich, creamy, and full of warming spices. Marinate the chicken in yogurt, garlic, ginger, and a bold spice mix, then let your slow cooker do the rest. Simmered with tomatoes and coconut milk, it’s an easy, hands-off dinner that tastes like you spent hours in the kitchen. 

Ingredients

  • 1 (2-inch) piece fresh ginger, peeled and grated

  • 1 tbsp garam masala

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 2 tsp paprika

  • 1 tsp turmeric

  • ½ tsp cayenne pepper

  • 1½ cups plain yogurt

  • 5 boneless, skinless chicken thighs, cut into 1-inch cubes

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 2 (14.5 oz) cans diced tomatoes

  • 1 can full-fat coconut milk

  • 1 tsp fine grain salt

Instructions

  1. In a large bowl, combine spices, onion, garlic, ginger, and yogurt.

  2. Add chicken and toss to coat.

  3. Cover and refrigerate for at least 2 hours to marinate.

  4. Add mixture to the slow cooker with diced tomatoes and coconut milk.

  5. Cook using the STEW preset.

  6. Once finished, select KEEP WARM mode to serve. Enjoy.
