Easy Slow Cooker Veggie Chili

This hearty, no-fuss veggie chili is loaded with beans, corn, tomatoes, and cozy spices—perfect for a comforting meal. Simply add everything to the slow cooker, let it simmer until the flavors come together, and serve with your favorite toppings like avocado, cheese, or sour cream. 

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (28 oz) crushed tomatoes

  • 1 bell pepper, chopped

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 tsp chili powder

  • 1 tsp cumin

  • 1 tsp oregano

  • Salt and pepper to taste

  • Optional garnishes: avocado, shredded cheese, sour cream, chopped cilantro

Instructions

  1. Add all ingredients to the Ceramic Inner Pot and stir to combine.

  2. Cook using the CHILI/BEANS preset.

  3. Use the KEEP WARM function for serving. Top each bowl with your desired garnishes and enjoy.
